Ultimate Brunch Bowl
I used to eat strict paleo several years ago, but have loosened up a bit in my old age. I mean, red wine, right? 😜 But this super easy throw together breakfast-lunch-dinner who knows what time of day meal is always a go-to for me.
The great thing about meals like this, as long as you have a couple of the foundation ingredients, is you can change it up with whatever you have on hand.
When I prep this meal I always, always make too much. Leftovers are great, and all that's needed is a fresh egg or two the next day!
Here is what I used:
Two large sweet potatoes
10 large grape roma tomatoes
Uncured smoked ham
Extra V olive oil
1/2 tsp garlic powder
Kosher salt & pepper
Scrub those potatoes well, because you'll want to leave the skin on. Dice them into about 1-2" chunks and toss in 2TBsp of evoo, the garlic powder, and s&p to taste. Roast them on 400 degrees until they begin to brown and are fork tender.
Slice your onion and add to a medium heated skillet with a TBsp of the evoo. Once they begin to brown add your tomatoes, sliced in half. If you are using larger tomatoes, you can cut them into chunkier bite sized pieces, or add a can of drained diced tomatoes. Season with s/p, and cook until the tomatoes have softened and blistered. Remove once cooked.
In the same pan, add another TBsp of evoo, and add your two cracked eggs to one side of the pan once the oil is heated. In the other half of the pan, add your ham slices, just to heat thru. Flip the eggs once they have cooked on the underside, and remove from heat. Now build your bowl.
Add your potatoes, top with the onion and tomato mixture. Add your ham, then your over easy fried eggs. A little more pepper if desired, and you're ready to eat!
I definitely prefer to add a little bit of green to this dish, if its on hand of course. Kale or spinach makes a great addition. Chop it up and saute with your onions! YUM!
